The best way to get up close and personal with nature while in Orlando is to take an airboat ride. Once you see the number of alligators wandering around free, you'll be looking over your shoulders for the rest of the trip. While a bit noisy, an airboat ride is a fun excursion that should be added to any Orlando itinerary.

While there are a number of good airboat tours in the Orlando area, if you travel east along highway 192 towards St Cloud you can get away from the overdeveloped tourist areas to see some real wilderness. Cypress Lake, just south of St Cloud, has no houses or development of any kind and so offers the chance to see what native Florida really looks like. Farther east in Melbourne and northeast in Titusville, you can also find great airboating along the St Johns River.
