For kayaker's, the 1000 Islands area off Cocoa Beach are filled with Mangrove tunnels and narrow channels to explore. Or for a truly unique kayaking experience, the Brevard Zoo allows you to kayak right on the zoo property (the only zoo in the country to do so).
Another great idea: Since the beaches in Melbourne are a little quieter then in other parts of Florida, you can actually go horseback riding on the beach.
Traveling a half hours or so inland from Melbourne you'll find the St Johns River, which is home to more alligators than you wish to know. Best way to see them up close is via an airboat ride.
